I forgot to post about this recipe I tried last week, so better late than never! I had Monday off for MLK Jr Day so I figured I would actually do a meal in the slower cooker for once. I need to ask myself why do I not use the slow cooker more often? You just throw everything in, walk about for a couple hours, come back and stir, and then a few hours later, it’s done! So easy.
This recipe for Pineapple Salsa Chicken is one I will definitely be making again in the future. It’s healthy and full of ingredients hubby actually likes.
The only thing I added was brown rice, and I added that about an hour before the timer for the cooker went off. The rice got nice and plump from all the liquid from the salsa and I think it helped to make the mixture a little thicker. We served this in small flour tortillas with some tomatoes, lettuce and sour cream on the side. It made tons of leftovers and I only used 4 chicken breasts. I think this would work well an appetizer for a party – almost like a dip for people to share?
I would give this recipe a 9/10 for being SO easy to make, very tasty and also a healthy meal I did not feel guilty about overindulging in!
