Last week I tried making Lightened Loaded Potato Soup, a recipe I found from Handle the Heat.
I’ll be honest…it was way too bland for me, which was strange since I tend to like meals with less salt/pepper. I know one thing that affected the flavor was that I didn’t add in the green onions. I’m just not an onion fan, as they tend to bother my stomach. I might consider adding in some garlic powder instead to see if that would help next time.
As for preparation, it was fairly easy to throw together. I did change a few things in the recipe and steps…I used skim milk, fat-free sour cream, and turkey bacon. For the steps, after I heated the bacon in the microwave, I crumbled it and added it right into the soup mixture, then heated everything up again and let it simmer for about 7 minutes. After I ladled it into the bowls, I shredded some cheddar cheese right on top.
Overall I would give this recipe a 6 out of 10…with some more seasonings, it would end up being much much better :)
