I actually made these a few weeks ago but since they’re not specifically holiday themed, I thought it would be okay to post these after the new year. I found the inspiration for these on Pinterest, but I changed the cupcake recipe. The cake batter I used is made of a box of Devil’s Food chocolate cake mix, 2 egg whites, 1 1/3 cups water, 1 6oz vanilla Chobani yogurt, 4 tablespoons of unsweetened cocoa powder, 1 teaspoon ground cinnamon, and 1 teaspoon of nutmeg. Mix all ingredients together for 2 minutes on medium speed, pour 2/3 full into cupcake liners and then bake for about 20-25 minutes at 350 degrees. EASY!
The peppermint buttercream frosting is also an easy recipe – this I took right from The Sweet Life and you can find the recipe here.
Once the cupcakes were cool, I just used a spatula to frost them so they were purposely messy. After that, I still had leftover candy canes so I broke them into 3 pieces and stuck them into the cakes for a little extra decoration. I also added a few mini marshmallows so they resemble the top of a mug with whipped cream. My favorite part is the frosting – it’s sweet and minty and rich and goes perfectly with the chocolate cupcake. Perfect for a winter party or get-together!
